Here is a non-exhaustive list of Mexican dishes that you will find during your trip to Mexico. I can even say my top Mexican dish mixing authentic Mexican specialties and recipes.
Tortillas
Considered Mexican bread. They are part of the base of Mexican cuisine that accompanies many dishes. Tortillas are pancakes or corn pancakes.
Tacos
One of my favorite dishes! The tacos are served in a tortilla which can be both served hot or crispy accompanied by a delicious mixture stuffed with guacamole, tomatoes, meat (beef or chicken), then cream and sometimes with cheese
Quésadillas
Need to eat fast? Simple, but so good. Quesadillas are flatbreads (tortilla) folded in half and filled with meat, cheeses and vegetables.
Enchilada
It is a corn tortilla usually rolled up with beef, chicken or fish accompanied by a tasty mixture of tomato, onions, cheese and then topped with a chili sauce. The enchilada is a very popular dish that can be found everywhere. Moreover, very worked in restaurants and sometimes basic on the roadside.
Guacamole
Served with many dishes, more precisely in restaurants, but very rarely on the roadside. Guacamole is a cold mash of avocado seasoned with lime, cilantro and crushed onion. Guacamole has become my Mexican mayonnaise for me..
Burritos (Tex-Mex) :
The burrito is the culinary fusion between Texas and Mexican cuisine. Wrapped in a tortilla, the burrito is a mix of meat, beans, cheeses and spices like chili. When the burrito is dipped in oil to be fried, it is called "chimichanga".
Mole
When we talk about a regional dish, we cannot miss the mole poblano, which, moreover, makes it the fervor of the Mexicans of the state of Puebla. The mole is a mix between sweet and salty merging poultry (turkey, chicken) and cocoa, pepper. From one cook to another, the sauce may vary slightly.
Chilaquiles
Mexican breakfast but, you can enjoy at any time of the day as an appetizer or main course. Chilaquiles are concocted with crunchy tortillas and accompanied by meats, vegetables, an egg and a chili-based sauce then sprinkled with cheese. A truly delicious typical dish

It is a very fresh dish that can be eaten endlessly. Tostadas are crunchy tortillas topped with guacamole, red beans and vegetables. What is good with this dish is that you can add the ingredients you want. It's a customizable dish!

Pozole
Surely one of the star dishes of traditional Mexican cuisine. Corn soup accompanied by meat (pork or chicken), chickpeas then vegetables.
